Chicken Scarpariello


This is such a fun dish....it was one of Mom's and Dad's favorites to make
together while sipping their favorite libation...

Serves 6

3 Boneless chicken breasts (about 12-16 oz. or 1¼ lb.) - cut into ¾” bites)
Hot Italian Sausage- 3 links - casing removed and crumbled
Onion - 1 large - chopped
Olive oil - 1/4 cup
White wine – ¾ cup
Red wine vinegar, or fresh lemon juice – 1/3 cup
Chicken Broth – ¾ cup
Garlic cloves - 3 cloves minced
Anchovies – 4 chopped
Capers - 3 T
Flour (for dredging)
Red pepper flakes – 1 teaspoon
Fresh Basil – 4 small leaves, chopped
Rosemary sprig – 1 sprig, chopped
Sage – 10 small leaves, chopped

Dust chicken with flour. In large sauté pan, add 1/8 cup oil and heat. Add chicken
Italian sausage and cook until golden brown. Set aside. Add remaining oil to same pan and sauté onions on medium high until slightly browned. Add garlic and anchovies and cook for one minute.  Stir in sage, capers, rosemary, red pepper flakes, and basil. Add wine, vinegar and chicken broth. Reduce fluid and return chicken to pan. Toss and reduce more - about 5 - 7 minutes.
Serve with rice or noodles.
