Serves 4
1 ½ - 2 lb. salmon fillet
¼ cup pure maple syrup
¼ cup soy sauce
3 T. fresh lemon juice
2 T. thinly sliced scallions
1 t. Dijon mustard
½ t. finely chopped gingerroot
Mix all ingredients. Place salmon in shallow glass or plastic dish and top with all but ¼ cup marinade. Refrigerate for at least 30 minutes.
Heat oven to 400 degrees. Remove fish from marinade and place in baking dish. Bake for 10-15 minutes, basting with marinade. Serve with reserved ¼ cup marinade.
