Black Eye Pea Dip

Our mother comes from Texas...so we grew up with the Southern tradition of having black-eye peas on New Year's Day for good luck. We happen to ADORE black-eye peas, but many of our friends (and some of our own family members) are not quite so enthusiastic. This dip brings out the best in all its ingredients.

8 oz. cheddar cheese, shredded
1 stick butter
3 cans black-eye peas, drained
5 pickled jalapeno peppers, chopped
1 T jalapeno juice from jar
1/2 medium onion, chopped
4-oz. can chopped green chilies
1 clove garlic, minced

Melt cheese and butter in a large saucepan. Meanwhile, process the remaining ingredients in a food processor. Add the black-eyed pea mixture to the cheese/butter mixture. Heat and serve in a chafing dish with tortilla chips.
